Takamatsu is famous for udon. The city's "sanuki" style udon is characterized by firm and chewy noodles in a relatively clear and weak broth. I ate udon for every meal while in Takamatsu. This represents my first bowl: kitsune udon. Kitsune (which means fox in Japanese) refers to the sweet fried tofu placed atop the noodles.
Kitsune soba / udon is my favorite variety. As a rule, I try to order it whenever I eat noodles. I am working systematically to locate the best bowl in all of Japan. This bowl was not it! My personal favorite (so far) still resides in Kyoto.
I have also decided that if I fail at everything else in life, my goal will be to open a noodle shop called "kitsune" that sells nothing but kitsune udon. I'm thinking 15 different varieties or so on the menu should do the trick.
