Lunch Break!
Nikko is famous for "yuba". For those who don't know, yuba is a tofu product. It is produced by slowly heating a tub of incredibly fresh, super-high-quality soy milk until just the topmost layer develops a thin skin. The skin is then peeled off and eaten.
